Barbecued salmon with red onion marmalade recipe details
Ingredients
4 | salmon steaks, at least 2.5cm thick |
2 tbsp | olive oil |
salt and freshly ground black pepper | |
5 medium | red onions, peeled |
50 g | butter |
175 ml | red wine vinegar |
50 ml | crème de cassis |
50 ml | grenadine |
50 ml | red wine |
Instructions
Rub the olive oil into the fish. Season the fish well with salt and pepper.Finely slice the onions. Melt the butter in a large heavy-based saucepan and add the onions. Sauté for 5 minutes. Stir in the vinegar, Cassis, grenadine and wine and continue to cook until the liquid has reduced.
It should take about 10 minutes until the liquid has almost entirely evaporated and the onions are glazed. Season well. Brush the fish with a little more oil and barbecue or grill for 4 minutes on each side.
