Vegetable curry sauce recipe details
Ingredients
500 g | potatoes, peeled and diced |
2 | carrots, peeled and cut into small pieces |
200 g | cauliflower florets, broken into small pieces |
200 g | broccoli florets, broken into small pieces |
1 tbsp | olive oil |
1 medium | onion, finely chopped |
1 tbsp | curry powder |
1 tbsp | tomato puree |
550 ml | vegetable stock |
200 ml | natural yoghurt |
Instructions
Boil the vegetables: start with the potatoes and carrots. After about 5 minutes add the cauliflower and broccoli. Cook until tender, about 10 minutes.Heat the oil in a large pan, add the onion and fry until tender. Add the curry powder and tomato puree and stir to combine.
Cook for a few minutes and then slowly add the stock and yoghurt. Leave to simmer until thickened.
Add the cooked vegetables and stir.
