Ingredients
3 tbsp | grapeseed oil |
125 g | raw cashews |
125 g | blanched almonds |
125 g | skinless raw peanuts |
2 tbsp | sesame seeds |
3 tbsp | sunflower seeds |
1 tbsp | curry powder |
1 tsp | chilli powder |
some | rock salt |
Instructions
Heat 1 tablespoon of oil in a large heavy-based saucepan and fry cashews over a low heat, stirring frequently, for about 5 minutes or until lightly golden and set aside. Add 1 tablespoon more of oil and repeat with almonds and set aside.Add remaining oil and fry peanuts for about 5 minutes or until lightly golden, then return cashews and almonds to pan and add sunflower and sesame seeds, curry powder and chilli powder and stir well.
Cook for 3 minutes over a low heat, stirring constantly, then transfer to a non-metalic bowl and season well with salt.
Allow to cool completely, store in an airtight container and use as required.
