Potato croquettes recipe details
Ingredients
1 kg | potatoes, peeled |
3 medium | eggs, yolks only |
2 medium | eggs, beaten |
50 g | butter |
100 g | flour |
bread crumbs | |
salt and pepper, to taste | |
nutmeg | |
oil for frying |
Instructions
Cook potatoes in boiling water until tender. Drain and mash without adding any liquid.Melt the butter in a saucepan, whisk in the egg yolks and continue whisking over low heat until the mixture thickens.
Remove from the heat and blend into the mashed potatoes. Season with salt, pepper and nutmeg and form into croquettes.
Roll each croquette in flour, then dip into the bowl containing two beaten eggs. Roll in bread crumbs and fry until golden.
