Vegetable cheeseburger recipe details
Ingredients
150 g | boiled potatoes, from the day before |
1 | carrot, approx. 150g |
1 | gherkin |
1 | egg |
1 tbsp | flour, heaped tbsp. |
salt and pepper | |
1 pinch(es) | allspice |
2 tbsp | sunflower oil |
6 | hamburger buns |
6 tbsp | sandwich spread or mayonnaise |
6 slice(s) | cheese, e.g. Cheddar, Gouda, approx. 20g each |
6 large | lettuce leaves |
½ | cucumber |
Instructions
Grate the boiled potatoes into a bowl. Wash and peel the carrot, drain the gherkin, then grate both and add into the bowl. Stir in the egg and the flour and season with salt, pepper and allspice. Knead until well combined.Preheat the oven to 220°C.
In a skillet, heat the oil. Shape the potato mixture to 6 equal balls and flatten. Sear until crispy and brown on both sides.
Halve the buns and spread all halves with sandwich spread. Place the bottoms on a lined baking tray, divide the vegetable fritters onto them and cover with cheese each. Bake for 5-8 minutes.
Wash the lettuce and the cucumber. Drain and pat dry. Cut the cucumber in thin slices. Remove the buns from the oven and arrange the cucumbers and lettuce leaves on top. Cover with the upper halves and serve immediately.
