Ingredients
For the Filling: | |
450 g | cottage cheese |
480 ml | double cream |
2 large | eggs |
115 g | granulated sugar |
40 g | plain flour |
For the pastry: | |
150 g | plain flour |
2 large | eggs, beaten |
120 g | unsalted butter, chilled |
1 tbsp | granulated sugar |
1 pinch(es) | salt |
Instructions
Preheat oven to Gas Mark 5, 375°F, 190°C. Grease and flour an 8-9 inch, 20-23cm deep pie dish.To make the pastry:
Mix salt, sugar and flour in a bowl until well mixed. Cut in the butter with a knife and finish rubbing in with your fingertips until the breadcrumb stage. Make a well in the centre and pour in the eggs. Start bring together to a dough with a spatula and finish with your hands.
Form dough into a ball, wrap in cling film and refrigerate for 30 minutes.
Roll out dough on a lightly floured surface to fit tin, including sides and refrigerate again for 30 minutes. trim pastry immediately before filling.
To prepare the filling:
Combine all ingredients in a bowl and mix well until even. Pour into prepared pastry base and bake for 40-45 minutes. Allow to cool completely before serving.
