Cheese Tart recipe

|For the Filling:|
|450 g||cottage cheese|
|480 ml||double cream|
|115 g||granulated sugar|
|40 g||plain flour|
|For the pastry:|
|150 g||plain flour|
|2 large||eggs, beaten|
|120 g||unsalted butter, chilled|
|1 tbsp||granulated sugar|
Preheat oven to Gas Mark 5, 375°F, 190°C. Grease and flour an 8-9 inch, 20-23cm deep pie dish.
To make the pastry:
Mix salt, sugar and flour in a bowl until well mixed. Cut in the butter with a knife and finish rubbing in with your fingertips until the breadcrumb stage. Make a well in the centre and pour in the eggs. Start bring together to a dough with a spatula and finish with your hands.
Form dough into a ball, wrap in cling film and refrigerate for 30 minutes.
Roll out dough on a lightly floured surface to fit tin, including sides and refrigerate again for 30 minutes. trim pastry immediately before filling.
To prepare the filling:
Combine all ingredients in a bowl and mix well until even. Pour into prepared pastry base and bake for 40-45 minutes. Allow to cool completely before serving.
