Vegetable beef and short rib soup in crock pot.
Ready in: 10 hours 20 mins

Ingredients

Serves: 10
  • 1.5 pounds short ribs
  • 1.5 pounds beef for soup
  • 6 beef boullon cubes or
  • 1-32 ounce package frozen vegetables
  • 1/2 cup chopped onion
  • 1-15 ounce can tomato sauce
  • 1-15 ounce can crushed tomatoes
  • 4 cups water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 bay leaf
  • 1 cup barley soaked overnight

Preparation method

Prep: 20 mins | Cook: 10 hours

1. (Drink 4 beers!)
2. Throw everything in a crock pot.
3. (Drink 1 or 2 more)
4. Set for 10 hrs.
5. Cut the meat off the ribs after cooling about 8 hrs.
6. (Break out the Irish coffee in the morning!)
7. Toss in the barley and cook for a couple more hrs.
8. Use to make it on the stove top in a few hours.
9. Just realized I loved the barley in it.
10. Subsitute the barley for small pasta sometimes!
11. Bought the cubed meat already cut from the grocery store Cut it up a bit more.Easier to cut up half frozen!
12. The more I beer I drink the more the recipe changes.
13. Use a big pot mine filled up to the top.
14. Usually ends up pretty good.
15. Freeze it for lunches
