Ingredients
Serves: 14- Dumplings:
- 2 cups baking mix
- 1 cup shredded Cheddar cheese
- 2/3 cup milk
- Soup:
- 10 cups water
- 1 pound fresh mushrooms, sliced
- 2 cups diced potatoes
- 2 cups chopped carrots
- 1 1/2 cups chopped celery
- 1 onion, chopped
- 3 chicken bouillon cubes
- 3 to 4 cups chopped cooked roast beef
- 2 cups cooked wild rice
- 3/4 cup flour
- 3 cups milk
- 1/4 cup butter
- 2 1/2 teaspoons salt
- 1 teaspoon dried basil
- 3/4 teaspoon pepper
Preparation method
Prep: 15 mins | Cook: 30 mins1. First, stir baking mix, cheese, and milk together in a bowl. Set aside.
2. Combine water, mushrooms, potatoes, carrots, celery, onion, and bouillon cubes in a large soup pot and place over medium heat. When soup boils, simmer on low for about 15 minutes, until potatoes are tender. Then add beef and rice.
3. In a mixing bowl, whisk flour with milk. Pour slowly into the soup and return to a boil; simmer until thickened, then add remaining ingredients.
4. Drop the biscuit dumpling dough into the boiling soup 1 tablespoon at a time. Then put a lid on the pot and cook for 10 to 14 minutes, until biscuit dough is cooked through.
