Vegetable and ham sauce with madeira recipe details
Ingredients
½ | carrot, diced |
1 slice(s) | celeriac, diced |
½ stalks | leek, diced |
½ | parsley root, diced |
1 | onion, chopped |
2 slice(s) | bacon or ham |
2 tbsp | butter |
2 tbsp | flour |
1 ½ cup(s) | beef stock |
1 tbsp | tomato puree |
salt and pepper | |
1 | bay leaf |
1 pinch(es) | ginger powder |
1 | clove |
½ cup(s) | red wine |
2 tbsp | madeira |
Instructions
In a saucepan, melt the butter and fry the carrot, celeriac, leek, parsley root, onion and ham for 5 minutes over low heat. Add the tomato purée and cook stirring for another minute. Dust with flour and cook until slightly browned. Stir in the stock and and bring to a boil. Add the wine, bay leaf, ginger and clove. Season with salt and pepper. and simmer over low heat for 1 hour.Pass the sauce trough a sieve and bring to a short boil again. Stir in the Madeira, check seasoning and correct, if necessary.
Serve with beef or venison.
