Ingredients

½  carrot, diced
1 slice(s) celeriac, diced
½ stalks leek, diced
½  parsley root, diced
1  onion, chopped
2 slice(s) bacon or ham
2 tbsp butter
2 tbsp flour
1 ½ cup(s) beef stock
1 tbsp tomato puree
salt and pepper
1  bay leaf
1 pinch(es) ginger powder
1  clove
½ cup(s) red wine
2 tbsp madeira

Instructions

In a saucepan, melt the butter and fry the carrot, celeriac, leek, parsley root, onion and ham for 5 minutes over low heat. Add the tomato purée and cook stirring for another minute. Dust with flour and cook until slightly browned. Stir in the stock and and bring to a boil. Add the wine, bay leaf, ginger and clove. Season with salt and pepper. and simmer over low heat for 1 hour.

Pass the sauce trough a sieve and bring to a short boil again. Stir in the Madeira, check seasoning and correct, if necessary.

Serve with beef or venison.
