Tuscan bread salad recipe details
Ingredients
1 | stale ciabatta bread, in 3cm cubes |
1 | red onion, finely sliced |
6 | ripe tomatoes, trimmed and cut into bite sized pieces |
1 | yellow bell pepper, trimmed and cut into bite sized pieces |
½ | cucumber, peeled, seeds removed and cut into bite sized pieces |
2 tbsp | red wine vinegar |
salt and pepper | |
6 tbsp | extra vergin olive oil |
2 clove(s) | garlic, minced |
100 g | black olives, pitted and halved |
½ bunch(es) | basil, torn leaves |
Instructions
Place the bread onto a lined baking tray and toast in the preheated oven at 180°C until golden.In a large salad bowl, mix the vinegar and the oil. Season with salt and pepper. Add the vegetables, bread, olives, garlic and basil and toss until well combined. Leave to soak for 20 minutes. Check seasoning and adjust if necessary.
