Turkey stew with potatoes and sweetheart cabbage recipe details
Ingredients
3 | onions, chopped |
4 clove(s) | garlic, chopped |
8 sprig(s) | thyme, chopped |
1 ¾ kg | joint of turkey, boneless, skin on, cut into 3cm cubes |
5 tbsp | oil |
3 | bay leaves |
1 ½ l | chicken stock |
1 ¼ kg | potatoes, peeled and quartered |
6 sprig(s) | parsley, chopped |
8 slice(s) | bacon, diced |
1 head(s) | sweetheart cabbage, shredded |
salt and pepper |
Instructions
In a large roasting tin heat the oil. Stir-fry the meat over high heat until golden all around. Add garlic, thyme and bay leaves and fry for another minute. Season with salt and pepper. Add the cabbage and cook, stirring frequently, for 5 minutes.Pour in the stock, add the potatoes and bring to a boil. Season to taste with salt and pepper. Cover the roasting tin with a lid and transfer into the oven. Cook at 180°C for an hour.
Fry the bacon in a pan until golden. Mix with the parsley.
Serve the stew sprinkled with the bacon mixture and garnished with dollops of sour cream.
