Ingredients

500 g Lebanese zucchini
2 tbsp cornflour
1 tsp black or white pepper, freshly grounded
1 tsp sea salt
70 ml peanut oil
some lemon wedges to serve

Instructions

Slice zucchini on the diagonal into long slices approx. 1 cm thick.

Put the cornflour, pepper and salt in a plastic bag and shake to mix well.

Put the zucchini pieces in the bag and toss until all the zucchini is well coated.

Heat the peanut oil and pan-fry the zucchini until golden brown on both sides.

Drain on paper towel, arrange on a plate and serve with lemon wedges.
