Ingredients

600 g turkey breast, cut into stripes
3  onions, chopped
8  ripe tomatoes, diced
2  courgettes, diced
½ bunch(es) basil, chopped
4 tbsp oil
salt and pepper
400 ml vegetable stock
5 tsp balsamic vinegar

Instructions

In a pan heat the oil. Fry the turkey stripes over medium heat for 3-4 minutes. Season with salt and pepper. Remove from the pan and set aside.

Add to the pan the onions and the courgettes. Sauté for a minute and season to taste with salt and pepper. Stir in the tomatoes and the stock and simmer for 6-8 minutes. Add the turkey stripes and the basil, switch off the heat and allow to soak for 3-4 minutes. Season to taste with salt, pepper and vinegar.

Serve with rice or pasta.
