Turkey ragout with vegetables recipe details
Ingredients
600 g | turkey breast, cut into stripes |
3 | onions, chopped |
8 | ripe tomatoes, diced |
2 | courgettes, diced |
½ bunch(es) | basil, chopped |
4 tbsp | oil |
salt and pepper | |
400 ml | vegetable stock |
5 tsp | balsamic vinegar |
Instructions
In a pan heat the oil. Fry the turkey stripes over medium heat for 3-4 minutes. Season with salt and pepper. Remove from the pan and set aside.Add to the pan the onions and the courgettes. Sauté for a minute and season to taste with salt and pepper. Stir in the tomatoes and the stock and simmer for 6-8 minutes. Add the turkey stripes and the basil, switch off the heat and allow to soak for 3-4 minutes. Season to taste with salt, pepper and vinegar.
Serve with rice or pasta.
