Turkey Ragout with Mushrooms recipe

Ingredients
250 g | mushrooms, sliced |
250 g | carrots, sliced |
8 | shallots, sliced |
600 g | turkey breast fillet, sliced |
200 g | single cream |
1 bunch(es) | chives, chopped |
1 clove(s) | garlic, minced |
4 tbsp | oil |
salt and white pepper | |
paprika powder | |
500 ml | chicken stock |
100 ml | dry white wine |
30 g | cornflour |
Instructions
In a saucepan heat 3 tablespoons of the oil. Fry the meat over high heat for 2-3 minutes. Reduce the heat. Season with salt, pepper and paprika powder. Take the meat out of the pan and set aside.
Add 1 tablespoon of oil and sauté in the pan the shallots and the mushrooms for 3-4 minutes. Season with salt and pepper. Stir in the carrots and pour in the stock and the wine. Brig to a boil and cook over medium heat for 5 minutes. Add the cream and the meat and cook over low heat for 5 more minutes. Stir in the chives and season to taste with salt, pepper and paprika powder.
Serve with soft white bread.
