Cauliflower bhajis recipe details
Ingredients
1 head(s) | cauliflower |
1 | onion |
20 g | butter |
½ tsp | cumin seeds |
½ tsp | turmeric powder |
½ tsp | coriander powder |
salt | |
oil for frying | |
For the batter: | |
200 ml | milk |
½ tsp | saffron |
200 g | chickpea flour (Besan) |
1 | egg |
salt and pepper |
Instructions
Cut the cauliflower into florets, cut the onion into slices and stew in 150 ml of water and the butter until the water is evaporated. Add the seasoning and cook over low heat for a few more minutes. Let cool.Mix milk and saffron and heat the milk for 30 seconds in the microwave. Let cool. Add a pinch of salt, pepper and the egg and mix well. Add the Besan and stir to make a batter. Toss the cauliflower and onion in the batter.
Heat oil in a wok and fry the florets and onions, turning regularly, until golden brown.
