This Cauliflower bhajis recipe is a delicious twist on traditional Indian bhajis, using cauliflower as the star ingredient. The florets are coated in a flavorful batter made with a blend of spices and then deep-fried to perfection. These crispy and fragrant bhajis make for a fantastic appetizer or snack option. Ingredients

1 head(s) cauliflower
1  onion
20 g butter
½ tsp cumin seeds
½ tsp turmeric powder
½ tsp coriander powder
salt
oil for frying
For the batter:
200 ml milk
½ tsp saffron
200 g chickpea flour (Besan)
1  egg
salt and pepper

Instructions

Cut the cauliflower into florets, cut the onion into slices and stew in 150 ml of water and the butter until the water is evaporated. Add the seasoning and cook over low heat for a few more minutes. Let cool.

Mix milk and saffron and heat the milk for 30 seconds in the microwave. Let cool. Add a pinch of salt, pepper and the egg and mix well. Add the Besan and stir to make a batter. Toss the cauliflower and onion in the batter.

Heat oil in a wok and fry the florets and onions, turning regularly, until golden brown.
