|3 tbsp||vegetable oil|
|2||red onions, sliced|
|1||red pepper, seeded and sliced|
|1||yellow pepper, seeded and sliced|
|1 kg||(leftover) turkey meat, cubed|
|180 ml||ready made salsa|
|1 tsp||cumin, ground|
|250 g||mixed grated cheese, Gouda, Cheddar, Mozzarella, Edam etc.)|
|1 bunch(es)||coriander, chopped (about a ¾ cup)|
|salt and pepper to taste|
|8||soft flour tortillas or rotis|
Heat the oil in a large non-stick pan. Add the onions and peppers and cook until tender and golden. Add the turkey, salsa and cumin and stir until heated through. Add the cheese and coriander and season to taste. Remove from the heat.
Heat each tortilla in a dry empty pan for about 30 seconds on each side. Spoon about 1 cup of warm filling over each tortilla.
Fold the sides over the filling and then roll up to seal.
