Ingredients
Serves: 5- 4 bacon strips
- 2 celery ribs, chopped
- 1 large onion, chopped
- 1 garlic clove, minced
- 3 small potatoes, peeled and cubed
- 1 cup water
- 1 (8 ounce) bottle clam juice
- 3 teaspoons reduced-sodium chicken bouillon granules
- 1/4 teaspoon white pepper
- 1/4 teaspoon dried thyme
- 1/3 cup flour
- 2 cups half and half
- 2 (6 1/2 ounce) cans chopped clams, undrained
Preparation method
Prep: 20 mins | Cook: 35 mins1. Place bacon in a Dutch oven over medium heat. Cook until crispy, then drain on paper towels. Crumble.
2. Cook celery, onion, and garlic in the bacon fat for 5 minutes. Add potatoes, water, clam juice, chicken granules, white pepper, and thyme. When the soup comes to a boil, simmer on low for 15 to 20 minutes until potatoes are cooked.
3. Whisk flour into 1 cup half and half in a mixing bowl. Pour in a thin stream into the chowder, stirring as you pour. Bring the soup back to a rolling boil and cook for 2 minutes to thicken.
4. Add chopped clams. When soup is hot, serve with bacon crumbles on top.
