Turkey and pea ragout with rice recipe details
Ingredients
300 g | frozen peas |
1 | onion, chopped |
3 sprig(s) | parsley, chopped |
salt and freshly ground black pepper | |
500 g | turkey breast fillet, cut into 2cm cubes |
200 g | rice |
3 tbsp | oil |
1 tsp | flour |
250 ml | vegetable stock |
Instructions
Cook the rice in salted water until tender, then drain.In a saucepan, heat the oil. Fry the meat until golden and crispy all around. Season with salt and pepper. Take out of the pan and set aside.
In the saucepan, fry the onions until lucent. Dust with the flour and cook stirring for 1-2 minutes. Pour in the stock and bring to a boil, stirring constantly. Add the peas and bring to the boil again. Cook for 2 minutes. Stir in the parsley and return the meat. Season to taste with salt and pepper.
Serve together with the cooked rice.
