Tuna and bean salad recipe details
Ingredients
1 | carrot, grated |
1 | pepper, sliced |
1 large can(s) | Cannellini beans, drained |
130 g | salad leaves |
4 | eggs |
1 large can(s) | tuna, flaked |
For the Dressing: | |
1 tbsp | olive oil |
salt | |
pepper | |
1 tbsp | vinegar |
1 pinch(es) | sugar |
1 tsp | mustard |
Instructions
Boil the eggs, preferably soft.Prepare the dressing by mixing together the olive oil, vinegar, mustard, sugar, salt and pepper.
Mix together the grated carrot, pepper, beans, tuna and salad leaves.
Arrange everything on 4 plates or on a large platter, pour the dressing over and place one egg per person on top.
Serve with some crusty bread.
