Ingredients

200 g plain flour
¼ tsp baking soda
2 tsp baking powder
1 tsp ground ginger
1 ½ tsp ground cinnamon
½ tsp ground cloves, optional
½ tsp salt
75 g unsalted butter, softened
1 large egg, lightly beaten
150 g brown sugar
175 g molasses or treacle
180 ml buttermilk, or use 180 ml full cream milk plus 2½ tsp lemon juice, mix and allow to thicken
2 tsp preserved ginger, finely chopped
1 tsp fresh ginger, grated with juice
icing sugar, for decoration

Instructions

Preheat the oven to Gas Mark 4, 180ºC, 350ºF.

Grease and line an 8-inch square, 20×20 cm tin or a deep 8-inch round cake tin.

Sieve together into a bowl the flour, sodas, spices and salt. Set aside.

Cream the butter, and sugar together in a large bowl until light and fluffy. Add the egg and molasses (or treacle). Add the dry mixture and buttermilk alternately and a little at a time until well blended.

Finally add the gingers and mix well. Pour into the tin and bake for 40-55 minutes or until done and tested with a skewer. Allow the cake to cool in the tin for about 5 minutes and then remove from tin to cool on a wire rack until completely cool.

Decorate with icing sugar.
