Triple ginger gingerbread cake recipe details
Ingredients
200 g | plain flour |
¼ tsp | baking soda |
2 tsp | baking powder |
1 tsp | ground ginger |
1 ½ tsp | ground cinnamon |
½ tsp | ground cloves, optional |
½ tsp | salt |
75 g | unsalted butter, softened |
1 large | egg, lightly beaten |
150 g | brown sugar |
175 g | molasses or treacle |
180 ml | buttermilk, or use 180 ml full cream milk plus 2½ tsp lemon juice, mix and allow to thicken |
2 tsp | preserved ginger, finely chopped |
1 tsp | fresh ginger, grated with juice |
icing sugar, for decoration |
Instructions
Preheat the oven to Gas Mark 4, 180ºC, 350ºF.Grease and line an 8-inch square, 20×20 cm tin or a deep 8-inch round cake tin.
Sieve together into a bowl the flour, sodas, spices and salt. Set aside.
Cream the butter, and sugar together in a large bowl until light and fluffy. Add the egg and molasses (or treacle). Add the dry mixture and buttermilk alternately and a little at a time until well blended.
Finally add the gingers and mix well. Pour into the tin and bake for 40-55 minutes or until done and tested with a skewer. Allow the cake to cool in the tin for about 5 minutes and then remove from tin to cool on a wire rack until completely cool.
Decorate with icing sugar.
