For the filling: | |
300 g | cheese, e.g. Cheddar or Gruyère |
100 g | sour cream |
cayenne pepper | |
½ tsp | cardamom |
½ tsp | cumin |
For the sauce: | |
4 | tomatoes |
1 | onion |
2 clove(s) | garlic |
2 tbsp | tomato puree |
1 tbsp | honey |
1 tbsp | cocoa powder |
1 tsp | oregano |
¼ tsp | curcuma |
¼ tsp | coriander |
½ tsp | cumin |
1 tsp | paprika powder |
salt, to taste | |

Instructions
Prepare 12 tortillas as described in my recipe in the database.For the filling:
Roughly grate the cheese, mix with sour crème and spices. Season to taste with cayenne pepper. Divide the mixture evenly on the freshly baked tortillas. Fold to wraps, place on the grill and allow to get hot.
For the sauce:
Dice the tomatoes and finely chop onion and garlic. Place all into a saucepan, add tomato purée, honey, cocoa and the spices and bring to a boil. Simmer until thickened and season to taste.
Serve the tortillas with some sauce and a dollop of extra sour cream.
