Ingredients

200 g flour
85 g sugar
5 tsp baking soda
1 ½ tsp baking powder
½ tsp salt
140 g dried cherries, chopped
60 g butter, melted
180 ml milk
1 medium egg, slightly beaten
½ tsp almond extract

Instructions

Combine all dry ingredients and mix well. Fold in cherries. Combine butter, milk, egg and almond extract and stir into the cherry-flour mixture.

Preheat oven to 180°C.

Spoon into a greased loaf pan and bake for about one hour or until a knife inserted in center of bread comes out clean. Cool in pan for 10 minutes, then remove from pan to cool on a wire rack.
