Tortelloni salad recipe details
Ingredients
750 g | tortelloni |
salt and freshly ground black pepper | |
5 tbsp | mayonnaise |
300 g | crème fraîche |
lemon juice | |
1 ½ bunch(es) | chives, chopped |
250 g | yellow cherry tomatoes, halved |
250 g | red cherry tomatoes, halved |
1 | cucumber, diced |
200 g | cabanossi, sliced |
2 tsp | oil |
150 g | rocket |
50 g | black olives, stoned removed |
Instructions
Cook the tortelloni in salted water until done.Mix together the mayonnaise and the crème fraîche. Season to taste with salt, pepper and lemon juice. Stir in the chives.
In a pan, heat the oil. Fry the cabanossi until crispy, then set aside.
In a large salad bowl, mix together the drained tortelloni, tomatoes, the dressing, cucumber, rocket and the cabanossi. Season to taste with salt and pepper. Serve garnished with the olives.
