Vegetable and mince pan with amaranth recipe details
Ingredients
30 g | amaranth |
some | salt and pepper |
1 small | courgette, sliced |
100 g | red bell pepper, diced |
1 tsp | oil |
100 g | beef mince |
2 sprig(s) | thyme |
250 g | tomatoes, canned dices |
100 ml | hot water |
Instructions
Soak the amaranth in the salted hot water for 40-45 minutes, covered with a lid.Heat the oil in a saucepan and fry the minced meat until browned and crumbly. Add the courgette and bell pepper and stir-fry for 5 minutes. Season with salt, pepper and thyme. Stir in the tomatoes and bring to a boil. Reduce the heat and simmer for 3-4 minutes. Season to taste with salt and pepper.
Serve together with the amaranth.
