Ingredients

30 g	amaranth
some	salt and pepper
1 small	courgette, sliced
100 g	red bell pepper, diced
1 tsp	oil
100 g	beef mince
2 sprig(s)	thyme
250 g	tomatoes, canned dices
100 ml	hot water

Instructions

Soak the amaranth in the salted hot water for 40-45 minutes, covered with a lid.

Heat the oil in a saucepan and fry the minced meat until browned and crumbly. Add the courgette and bell pepper and stir-fry for 5 minutes. Season with salt, pepper and thyme. Stir in the tomatoes and bring to a boil. Reduce the heat and simmer for 3-4 minutes. Season to taste with salt and pepper.

Serve together with the amaranth.
