Tortellini salad recipe details
Ingredients
500 g | Tortellini |
500 g | courgette, diced |
2 | onions, sliced |
600 g | mushrooms, sliced |
250 g | cherry tomatoes, halved |
150 g | sun-dried tomatoes in oil, diced |
250 g | mozzarella cheese, diced |
1 bunch(es) | basil |
2 clove(s) | garlic, minced |
salt and freshly ground black pepper | |
12 tbsp | oil |
3 tsp | mixed Italian herbs |
75 g | sugar |
300 ml | vegetable stock |
100 ml | white wine vinegar |
80 ml | olive oil |
Instructions
Cook the tortellini in salted water until al dente. Drain.In a large pan heat the oil. Fry the tomatoes, courgette and the mushrooms briefly. Season to taste with salt and pepper. Take out of the pan and set aside.
Sauté in the pan the onions, garlic and Italian herbs for 2 minutes.
In another pan, caramelize the sugar. Pour in the stock, vinegar and the onion mixture and bring to a boil. Simmer for 2 minutes. Stir in 2-3 tablespoons of the sun-dried tomato oil and the olive oil. Add the tortellini and the vegetables and toss gently. Allow to soak for an hour.
Before serving fold in the basil and the Mozzarella cheese. Season to taste with salt and pepper.
