Ingredients
500 g | Tortellini |
500 g | broccoli, in florets |
salt and freshly ground black pepper | |
250 ml | vegetable stock |
2 tbsp | flour |
2 tbsp | butter |
200 g | cream cheese |
1 | egg yolk |
1 tbsp | lemon juice |
3 tbsp | crème fraîche |
200 g | freshly grated cheese |
Instructions
Cook the Tortellini in salted water until done. Drain. Cook the broccoli in stock for 5 minutes, then strain through a sieve and collect the stock.In a saucepan, melt the butter. Add the flour and cook stirring until pale yellow. Whisk in the vegetable stock and bring to a boil. Reduce the heat and simmer for 10 minutes. Add more stock, if too thick. Stir in the cream cheese and the crème fraîche and bring to the boil again. Take from heat and whisk in the egg yolk. Season to taste with salt, pepper and lemon juice.
In a warmed serving plate, combine the broccoli and the tortellini. Pour over the sauce and serve sprinkled with the grated cheese.
