Ingredients
400 g | Tortellini |
100 g | mushrooms, sliced |
150 g | bacon, diced |
1 | onion, chopped |
1 clove(s) | garlic, minced |
125 ml | beef stock |
125 ml | single cream |
120 g | grated cheese (Cheddar or Gouda) |
75 g | freshly grated Parmesan cheese |
30 g | butter |
3 tbsp | crème fraîche |
salt and pepper |
Instructions
Cook the tortellini in salted water until done. Drain. Preheat the oven to 190°C.
In a saucepan, heat the butter and sauté the onions and garlic until lucent. Add the mushrooms and bacon and cook for 5 more minutes. Pour in the beef stock, single cream and crème fraîche and season to taste with salt and pepper.
Place the tortellini into a casserole and pour over the sauce. Sprinkle with the cheeses.
Bake for 15-20 minutes or until golden brown.
