Tortellini gargano recipe details
Ingredients
350 g | flour |
½ tsp | salt |
1 tbsp | oil |
250 g | cream cheese |
2 tbsp | freshly grated Parmesan cheese |
1 | red bell pepper, cleaned and diced |

200 g | canned artichoke hearts |
8 | black olives |
3 | tomatoes, peeled and diced |
1 | courgette, trimmed and diced |
4 tbsp | olive oil |
Instructions
Combine the flour with salt, oil and 250 ml of water. Knead until a smooth and pliable dough has formed. Allow to rest for 30 minutes.Mix the cream cheese with bell pepper and the Parmesan cheese. Season to taste with salt and pepper.
Roll out the dough and cut into squares. Spoon a little of the cheese mixture onto each dough square. Brush the edges with water and fold the squares together to shape tortellini. Cook the tortellini in salted water for 5 minutes. Drain.
Chop the artichokes and the olives and combine both with tomatoes and the courgette. In a saucepan, heat the oil and cook the mixture for 5 minutes. Season to taste with salt and cayenne pepper. Add the cooked tortellini, toss, and serve immediately.
