Ingredients
2 | onions, chopped |
2 tbsp | oil |
2 tbsp | tomato puree |
salt and pepper | |
sugar | |
3 tbsp | dry sherry |
2 can(s) | diced tomatoes |
Instructions
In a pan heat the oil. Sauté the onions until lucent. Add the tomato purée and cook stirring for a minute. Pour in the tomatoes and bring to a boil. Season to taste with salt, pepper and sugar. Cook over medium heat for 10 minutes, stirring frequently.
Add the sherry. Adjust the seasoning and serve.
