Bob's un stuffed red pepper soup recipe details
I had frozen peppers on hand, and wanted stuffed peppers, but peppers don’t stuff well after freezing, and I wanted to make something quick. I came up with this soup.

Ingredients
Serves: 6- 1 1/2 pound ground beef
- 4 cloves roasted garlic, chopped
- 1 medium onion, diced
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon seasoning salt
- 1/8 teaspoon thyme
- 2 red peppers, diced
- 2 yellow peppers, diced
- 1 cup heavy cream
- 28 ounce can tomato puree or tomato sauce
- 1 cup water
- 1 cup instant rice
- mushrooms (optional)
Preparation method
Prep: 10 mins | Cook: 20 mins1. In a large pot, brown the ground beef with the garlic, onion, salt, pepper, seasoning salt, and thyme; drain grease. Lower the heat to medium, then add diced peppers, and let simmer until peppers are almost tender. Stir in the cream; add the tomato puree and water, mixing well. Turn off heat, add the rice, place a lid on the pot, and let it stand for about 5 minutes until rice is cooked. Serve.
