Ingredients

4 small sirloin steaks, trimmed of fat and gristle(or bigger if they are six foot rugby playing nephews!)
300 g rice, 75 g per person
For the marinade:
2 tsp dark soy sauce
2 tsp dry sherry
2 tsp ginger, peeled and finely chopped
1 tsp cornflour mixed with a little sherry
1 tsp sesame oil
For cooking:
70 ml vegetable oil
1  chilli, finely chopped
1 small onion, chopped
3 clove(s) garlic, finely chopped
½  carrot, cut into slivers
8  mange tout or sugar snap peas, green beans or pieces of courgette
4 medium mushrooms, sliced
For the cooking sauce:
1 medium orange, zest and juice, plus an extra for garnish (or use chinese dried orange)
½ tsp Szechuan or black pepper
2 tsp dark soy sauce
¼ tsp salt
1 tsp sugar
½ tsp sesame oil

Instructions

Cut the steak into thin slices about 2 in/5 cm long and mix together the marinade ingredients. Stir the steak into the marinade and leave for 20 minutes to an hour. Drain and add the remains of the marinade to the cooking sauce

Set the water to boil for the rice and add when it is boiling, taking note of the cooking period required.

Heat the oil in a wok and add the drained beef and stir fry until it browns. Remove and keep warm. Reheat the pan and stir fry the onion and garlic until translucent and add the chilli, orange zest and vegetables and stir fry for a few minutes. Return the beef to the pan, stir and pour over the cooking sauce, and stir fry for about 4 minutes.

Serve immediately with the rice, and a slice or two of orange.
