Ingredients

12 large tomatoes, ripe but firm, use 8-12 according to size or use about 500g cherry tomatoes, halved
salt
1 bunch(es) basil, large washed and picked
4 tbsp balsamic vinegar
8 tbsp extra virgin olive oil
fresh ground pepper, to taste

Instructions

Tomato salads normally use sliced tomatoes; you may slice or quarter them or cut into wedges as you wish. Arrange tomatoes on a large flat serving dish or tray. Sprinkle over as much salt as you think necessary; taste a smaller slice/piece as you are likely to need more – tomatoes benefit from being well salted.

Drizzle balsamic vinegar lightly all around such that every piece has some. Tear the basil and sprinkle evenly over dish. Pour olive oil all over; there should be a surplus. Sprinkle with pepper and chill for about an hour until ready to serve.

Could serve a larger number if used in conjunction with other salads.
