Ingredients
12 large | tomatoes, ripe but firm, use 8-12 according to size or use about 500g cherry tomatoes, halved |
salt | |
1 bunch(es) | basil, large washed and picked |
4 tbsp | balsamic vinegar |
8 tbsp | extra virgin olive oil |
fresh ground pepper, to taste |
Instructions
Tomato salads normally use sliced tomatoes; you may slice or quarter them or cut into wedges as you wish. Arrange tomatoes on a large flat serving dish or tray. Sprinkle over as much salt as you think necessary; taste a smaller slice/piece as you are likely to need more – tomatoes benefit from being well salted.Drizzle balsamic vinegar lightly all around such that every piece has some. Tear the basil and sprinkle evenly over dish. Pour olive oil all over; there should be a surplus. Sprinkle with pepper and chill for about an hour until ready to serve.
Could serve a larger number if used in conjunction with other salads.
