A Greek-style pasta salad for summer cookouts, or on the table at dinner time.

Ingredients

Serves: 12
  • 6 cups vegetable broth
  • 1 (16 ounce) package orzo
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chopped tomatoes
  • 1 cup chopped, seeded, peeled cucumber
  • 1 cup thinly sliced fresh basil leaves
  • 4 green onions, chopped
  • 1/2 cup chopped fresh baby spinach
  • 1 3/4 cups crumbled feta cheese
  • 1/2 cup pine nuts, toasted

Preparation method

Prep: 10 mins | Cook: 15 mins

1. Bring broth to boil in saucepan over medium heat. Cook pasta in broth according to package directions.
2. Make a dressing by combining oil, vinegar, lemon juice, honey, salt, and pepper.
3. Combine tomatoes, cucumber, basil, onion, and spinach. Add pasta, pour dressing over the mixture, and toss to combine. Garnish with cheese and pine nuts.
