Ingredients
200 g | pasta, cooked (dry weight) |
1 tsp | salt |
500 g | brussels sprouts, leaves separated and blanched |
2 | grapefruits, peeled and sliced |
2 | tangerines, peeled and sliced |
2 | oranges, peeled and sliced |
2 tbsp | honey |
1 tbsp | white balsamic vinegar |
tbsp | walnut oil |
2 tbsp | olive oil |
100 g | chopped walnuts |
8 tbsp | orange juice |
2 tbsp | lemon juice |
some | parsley |
Instructions
Cook the lemon and orange juice in a small saucepan until thickened. Set aside until cool. Whisk the juice with honey, vinegar, salt, walnut oil and olive oil.In a large bowl toss the cooked pasta with Brussels sprout leaves and fruit slices. Season with the dressing and allow the salad to steep for 30 minutes.
To serve sprinkle with the walnuts and chopped parsley.
