Ingredients

1 ½ kg asparagus, woody ends removed, heads separate, stems sliced
2  shallots, sliced
50 g butter
1 tbsp olive oil
200 ml vermouth
¾ l vegetable stock
salt and pepper
1 dash(es) sugar
250 g yoghurt
1 tbsp fresh parsley, chopped

Instructions

Sauté the shallots in hot butter and oil over low heat for 5 minutes.

Stir in the Vermouth. Add the vegetable stock and the asparagus heads. Cook over medium heat for 8 minutes. Remove the asparagus heads and set aside.

Add the remaining asparagus and cook over medium heat for 15 minutes. Purée the the soup. Stir in the yoghurt, asparagus heads and the parsley and season to taste with salt, pepper and sugar.
