Tomato and cherry chutney recipe details
Ingredients
2 glass(es) | morello cherries |
300 g | onion, finely chopped |
3 clove(s) | garlic, finely chopped |
1 | red chili pepper, seeded and finely chopped |
150 ml | balsamic vinegar |
2 can(s) | tomatoes, chopped |
100 g | tomato puree |
1 tsp | cardamom |
25 g | parsley, chopped |
salt and freshly ground black pepper, to taste | |
250 g | jam sugar |
Instructions
Drain the cherries and collect 100ml of the juice. Roughly purée the cherries. Combine all ingredients ín a saucepan and bring to a boil. Cover and cook for 3-4 minutes. Season to taste with salt and pepper.Pour the chutney into sterilized jars and seal. Store at a cool and dark place.
Goes well with beef, poultry or venison.
