Ingredients

For the paste: | |
3 clove(s) | garlic |
2 stalk(s) | lemongrass, white inner parts only, finely chopped |
4 | kaffir lime leaves |
25 | galangal |
7 | cilantro roots, with some of the stem |
7 small | red chili pepper, or more, up to your taste |
2 | shallots (small ones, like Asian ones) |
1 tbsp | palm sugar |
1 tbsp | fish sauce |
1 tbsp | lime juice |
some | salt |
4 tbsp | oil |
Instructions
Chop all ingredients coarsely, add palm sugar, fish sauce, lime juice, salt and oil and blend into a fine paste.Heat oil in a pan and fry the paste for a few minutes until fragrant. Stir carefully.
