Tofu Tomato Soup recipe

Ingredients
6 large | tomatoes |
½ | onion, chopped |
1 tbsp | olive oil |
300 g | soft tofu |
300 medium | canned tomatoes, diced |
some | water |
some | fresh basil for garnish |
salt and freshly ground pepper, to taste |
Instructions
In a large pan sauté tomatoes and onion in olive oil until onions are soft but not brown.
Blend together the soup and tofu in a blender. Add blended mixture to the sautéed onions and tomatoes in the pan.
Het through and add water as needed. Season with salt and pepper and top with chopped fresh basil.
