Toffee apple muffins recipe details
Ingredients
350 g | flour |
2 tsp | baking powder |
2 tsp | mixed spice, ground |
200 g | caster sugar |
3 | apples, peeled, cored, very finely chopped |
3 large | eggs, beaten |
120 ml | vegetable oil |
100 ml | milk |
150 g | toffees, finely chopped |
Instructions
Preheat the oven to 180°C. Line a 12-hole muffin tray with paper cases.Combine the flour, baking powder, sugar and mixed spice in a large bowl. Make a well in the dry ingredients.
Add the chopped apples, eggs, oil and milk in the middle of the well, and beat with a mixer until well combined.
Fill the paper cases half full with the mixture, then sprinkle over the chopped toffee pieces. Add the remaining batter on top of the toffee pieces.
Bake for 25-30 minutes or until the muffins are well risen and golden.
