Ingredients
2 pounds spinach (or 1 pound spinach and 1 pound other green such as zucchini, Swiss chard, or broccoli)
4 Tablespoons butter
1 large onion, sliced
2 cloves garlic, crushed
1/2 teaspoon basil, thyme, and oregano
12 eggs
Salt and pepper to taste
1/2 cup cream
2 cups shredded Swiss cheese
1 cup grated Parmesan cheese
Instructions:

Preheat oven to 350 degrees. Saute onion and garlic in butter until transparent. Add greens and heat for approximately 3 minutes. Remove from heat and add basil, oregano, and thyme.

Beat eggs lightly with salt, pepper, and cream. Add the cheeses. Mix in the greens. Pour into greased quiche dish, or add a few more eggs and use a 9 x 13-inch dish. Bake for 20 to 30 minutes.

Serves:8 to 10 (double recipe and use two 9 x 13-inch pans to serve 18 to 20).
