Bring 1 litre of water with 1 tablespoon of salt to a boil. Add the onion, caraway, 2 bay leaves and the eggs. Boil for 8-9 minutes. Drain and peel the eggs.
Prepare 3 jars and place 5 eggs into each. To the fist one add the rosemary, thyme and marjoram. To the second jar add chili, ginger and lemon grass and to the third the shallots and the remaining bay leaves.
Bring sufficient salted water to a boil and fill the jars up to the rim. Seal the jars and allow to stand at least for 2 days before serving the eggs.
