Ingredients

10  salted herrings, filleted and cut into bite-sized pieces
¼ l dry red wine
250 g sugar
¼ l red wine vinegar
2  bay leaves
2  cloves
1 tsp freshly ground black pepper
375 g onion, thinly sliced

Instructions

Mix together the wine, vinegar, sugar, bay leaves, cloves and the pepper. Stir in the onions and bring to a boil. Cook for a minute, then remove from the heat and allow to cool completely.

With a slotted spoon, take out the onions and layer them in turn with the fish into a glass bowl. Pour over the marinade. Cover and marinate for 2 days before serving.
