Pickled cherry tomatoes recipe details
Ingredients
500 g | firm ripe cherry tomatoes |
500 ml | white wine vinegar |
150 ml | apple juice |
1 tsp | salt, heaped |
2 tbsp | sugar |
2 clove(s) | garlic, sliced |
2 | red hot chilli peppers, chopped |
1 tsp | fennel seed |
1 tsp | mustard seed |
Instructions
Wash and pat dry the tomatoes and prick each tomato several times with a wooden toothpick. Put them into sterilized jars.Bring vinegar, apple juice, chilli, garlic, salt, sugar and the seeds to a boil and cook for approximately 5 minutes. Strain into another saucepan and bring to the boil again. Pour the hot liquid over the tomatoes and seal. Cool and store at a dark and cool place. Leave to steep for 2-3 days before serving.
