Three cheese baked mashed potatoes recipe details
A three cheese blend of mozzarella, mild cheddar and Romano cheese, thick-cut bacon and various spices in a creamy mashed potato blend.

Ingredients
Serves: 12- 3 large white potatoes, peeled and quartered
- 6 large Sierra Gold potatoes, peeled and quartered
- 1 tablespoon salt
- 1 finely diced red onion
- 1 1/4 cups unsalted butter
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 3-6 pressed garlic cloves
- 1/2lb Apple Gate(R) bacon (or chosen thick-cut bacon)
- Celery salt and white pepper to taste
- 1 cup grated mild Cheddar cheese
- 1 1/2 cups grated Mozzarella cheese
- 1 1/2 tablespoons tarragon
- 1 tablespoon basil
- 1/4 tablespoon thyme
- 1 bunch Italian parsley
- 2 pints whipping cream
- 3 tablespoons milk
- 1 cup grated Romano cheese
- 1 cup chopped chives
- Butter Mix(To grease the pan for baking, brushed on top)
- 10 tablespoons unsalted butter
- 1 1/2 tablespoons tarragon
- Celery salt and white pepper
Preparation method
Prep: 20 mins | Cook: 1 hour1. Preheat oven to 350 degrees F.
2. Add potatoes to a large soup pot, fill pot with water to 1 inch above potatoes, and add 1 tablespoon salt. Bring to a boil and simmer until tender, about 15 minutes. Drain.
3. While the potatoes are cooking, prepare the seasonings. Cook the onion in a large skillet with 1/2 cup butter for 6 to 8 minutes, then add the diced peppers. Cook another 4 to 6 minutes.
4. Add the pressed garlic and cook another 6 to 8 minutes, then set all the cooked seasonings aside.
5. In a clean skillet, cook bacon. Drain well, then dice.
6. In a large mixing bowl, add cooked potatoes, cooked vegetables, bacon, cheeses (except the Romano), herbs, whipping cream, and milk.
7. Mix with an electric hand mixer and make sure the potatoes are smooth, with no clumps and bumps.
8. In a small plastic mixing bowl, microwave the 10 tablespoons butter, 1 1/2 tablespoons tarragon, and celery salt/white pepper seasonings to taste until mixture is melted. Stir. Grease a 2inch cooking pan(Best to use a disposable cheap one)
9. Use butter mixture to grease a 13×9-inch baking dish. Add mashed potato mixture to the pan and brush any leftover butter on top.
10. Sprinkle with the Romano cheese and chopped chives. Bake for 1 hour.Cook Information Cleanup:
