Ingredients

1 tbsp | butter |
3 tbsp | olive oil |
2 | lemons |
1.6 kg | chicken |
1 tsp | flour |
75 ml | white wine, dry |
3 sprig(s) | fresh rosemary |

some | freshly ground black pepper |
150 g | flour |
2 tbsp | crème fraîche |
1 tsp | brown sugar |
Instructions
Separate 3 of the heads of garlic into cloves and peel them. Remove the first layer of papery skin from the remaining heads.Heat the butter and 1 tbsp of the oil in a oven-proof casserole or Dutch oven that is just large enough to take the chicken and garlic. Add the chicken cook over a medium heat, turning frequently, for 10-15 minutes, until it is browned. Plug into the chicken the 2 lemons.
Sprinkle in 1 tsp flour and cook for 1 minute. Add the wine, the peeled cloves, the whole heads of garlic and the rosemary. Pour over the remaining oil mixed with the brown sugar and season to taste with salt and pepper.
Mix the main batch of flour with sufficient water to make firm dough. Roll it out into a long sausage and press it around the rim of the casserole, then press on the lid to create a tight seal.
Cook in a preheated oven (180ºC) for about 1.5 to 2 hours.
To serve, lift off the lid to break the seal and remove the chicken and whole garlic and keep warm.
Discard the rosemary, place the casserole on the hob and whisk to combine the garlic gloves with the juices. Add the crème fraîche and mash it and reduce if necessary. Process the sauce in a food processor or blender or press through a sieve if a smoother result is required.
Serve the chicken with the sauce, mashed potatoes and the garlic purée.
