Ingredients
Makes: 20 meatballs- 1/4 cup plus 2 tablespoons olive oil
- 1/2 cup finely chopped onion
- 1 clove garlic, finely chopped
- 1 pound ground lamb
- 1 slice bread, crumbled
- 1 egg, beaten
- 1 teaspoon chopped fresh mint
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- Salt and pepper, to taste
- 2 tablespoons flour
Preparation method
Prep: 20 mins | Cook: 25 mins1. Pour 2 tablespoons olive oil into a large skillet and place over medium heat. Cook onion and garlic in hot oil for 6 to 8 minutes, until soft. Remove from heat.
2. Gently stir lamb, bread, egg, mint, coriander, cumin, onion-garlic combination, and salt and pepper to taste together in a mixing bowl. Form into 20 meatballs, one inch across.
3. Lightly dredge meatballs in flour.
4. Pour 2 more tablespoons olive oil into the skillet and place over medium heat. Brown half of the meatballs in hot oil until thoroughly cooked, about 9 minutes, then repeat with remaining oil and meatballs.
5. Drain, then serve.
