Lasagna with cottage cheese and vegetables recipe details
Ingredients
350 g | courgette, roughly grated |
200 g | mushrooms, sliced |
1 | onion, chopped |
1 clove(s) | garlic, minced |
1 tbsp | butter |
500 g | canned tomato puree |
salt and pepper | |
paprika powder | |
250 g | cottage cheese |
300 g | cream cheese |
1 tbsp | parsley, chopped |
½ tbsp | chives, chopped |
3 tbsp | milk |
400 g | sheets of lasagna |
4 slice(s) | cheese |
1 tsp | thyme |
Instructions
In a saucepan, heat the butter and sauté the onion and garlic until lucent. Stir in the mushrooms, courgettes, tomato and thyme. Cook over low heat for 5 minutes. Stir in the cottage cheese and season to taste with salt, pepper and paprika powder.Preheat the oven to 190°C.
Mix together the cream cheese, milk, parsley and chives. Season with salt and pepper.
In a buttered casserole, cover the bottom with some of the cream cheese sauce, then layer in turn sheets of lasagna, vegetable sauce and cream cheese sauce until all is used up. The last layer should be vegetable sauce.
Sprinkle with the grated cheese and bake for 30-40 minutes.
