Thai style pineapple fried rice recipe details
This was a dish we had on a recent trip to Thailand. I’ve invented my own recipe based on the flavors I remembered and my knowledge of Thai cooking. It’s a great side dish with a Thai meal. You can increase or reduce the fish sauce to taste or add some fresh chiles to this if you want a little heat. Serve, and listen for the ooo’s and aaaa’s.

Ingredients
Serves: 6- 1 large fresh ripe pineapple
- 2 cups cold cooked rice
- 4 slices back bacon, chopped
- 3 tablespoons fish sauce
- 1 egg
- 3 cloves of garlic, crushed
- 3 tablespoons oil
- 2 tablespoons chopped cilantro
Preparation method
Prep: 20 mins | Cook: 20 mins1. Cut the pineapple in half lengthways. Carefully scoop out the flesh of each half leaving the husk intact. This is your serving dish. Cut the flesh into bite sized pieces and set aside.
2. Heat the oil in a large skillet or wok. Scramble the egg in the hot oil, remove and reserve. Stir fry the garlic and back bacon in the skillet until bacon is crisp, 3 or 4 minutes. Mix in the reserved pineapple pieces and stir fry 3 or 4 minutes more. Add the rice, and stir fry to combine all the ingredients, adding the fish sauce as you stir.
3. Mix in the cooked egg and stir fry rice mixture for another 4 or 5 minutes till heated through.
4. Serve the rice in the hollowed out pineapple husks. Garnish with cilantro.
