Ingredients
Serves: 4- 2 teaspoons vegetable oil
- 1 onion, sliced
- 9 ounces firm tofu, cut into 1-inch cubes
- 1 tablespoon Thai green curry paste
- 2 cloves garlic
- 4 bok choy, each halved
- 1 red bell pepper, sliced thinly
- 1 cup canned coconut milk
- Handful of fresh basil
Preparation method
Prep: 10 mins | Cook: 15 mins1. Heat oil in a large saucepan over high heat. Cook onion in hot oil for about 3 minutes, then add the tofu and stir-fry for 7 minutes to brown.
2. Stir in the curry paste and garlic; cook until fragrant, about 1 minute, then stir in the bok choy and red pepper. After 2 more minutes of cooking, stirring constantly, add the coconut milk and basil. Bring to a boil.
3. Serve stew over rice, if desired.
