Thai style chicken and mushroom soup recipe details
Ingredients
2 clove(s) | garlic, crushed |
¼ tsp | black peppercorns |
1 tbsp | grapeseed oil |
1 tbsp | thai green curry paste |
300 g | button mushrooms, sliced |
1.2 l | chicken stock |
3 tbsp | cornflour disolved in 6 tablespoons cold water |
8 stalks | spring onions, cut into 2.5 cm long diagonals |
2 tbsp | fresh chopped coriander |
1 ½ tbsp | fish sauce |
Instructions
Crush peppercorns using a pestle and mortar, add garlic and combine to make a paste. Heat oil in a saucepan, add garlic paste and thai green curry paste and fry over a low heat for 2 minutes, stirring.Stir in mushrooms, add chicken stock and bring to the boil. Stir in cornflour and boil for 2 minutes, then lower heat and simmer for 10 minutes.
Add spring onions, coriander and fish sauce and simmer for 2 minutes. Taste and add more fish sauce if required. Add leftover chicken and cook for a few mins until chicken is hot through.
Serve in bowls garnished with sprigs of coriander.
